12 average size Roma Tomatoes
24 small slices of smoked gouda cheese
Start your charcoal grill with Black Wood Lump and get grill up to around 350 degrees. Cut a small portion from each end of tomato to give it a flat surface. Then cut tomato in half giving you 2 flat surfaces on each piece. Take the 24 pieces and baste with olive oil. Then sprinkle with salt , pepper and garlic salt on both ends. Place directly on grill and cook about 2 1/2 minutes on each side. For the last minute on second side put the gouda cheese on top and let melt on tomato. You can serve by themselves or on top of a thin cracker of your choice.
