Simple Campfire or Grilled Chili

Large Cast Iron Dutch Oven
Grill or Campfire set to cook at 250 degrees with lump charcoal and wood chunks to get that great smoky flavor.
2-lbs. of 80/20 Ground Chuck or Ground Sirloin
1 cup of diced yellow or red onion
1 cup of chopped green bell pepper
either 2 cloves of fresh garlic chopped or 1 tablespoon of garlic salt
2- Tablespoons of Chili Powder
1- Tablespoon of Cumin1- can of original Rotel1 large can of tomato sauce
1 can of REFRIED BEANS
Salt and pepper to taste
If you like it kicked up a notch use a teaspoon of cayenne or a tablespoon of crushed red pepper flakes

First saute your onions and bell peppers in a little olive oil until soft, a couple of minutes, then add your meat and brown well while chopping it up into small pieces, When this is finished drain off any excess fat, add remaining ingredients , stir really well to get everything mixed together well. If you like your chili a little less thick just add beef broth until you get consistency desired. Seasonings can be adjusted to taste. Simmer over fire about an hour before serving.
