Chipotle Mayo OR Dijon Mustard
Sliced Dill Pickles
Fire up your charcoal grill with some Black Wood lump to around 400 degrees. Make little stacks of shaved meat about 1 1/2 ounces in weight. Place those on the grill in a manner that that you can flip with tongs or Spatula after about a minute and half. After flipping ay a thin slice of provolone on top to melt during the remaining minute and a half. While the meat is cooking steam or grill your bread of choice.On some then put chipotle mayo on and the rest Dijon Mustard. Then stack your meat with cheese on bottom half and add Caramelized onions and pickle. When finished if not serving immediately place in a pan that can be wrapped in foil to keep them warm. This is a hearty appetizer so one per person unless teenage boys involved then your guess.
Smoked Sausage Sliders
Similar to above for grilling part but take a 2 inch length of Conecuh Smoked Sausage, slice in half but leave back skin in tack to hold the halves together for grilling. About 2 minutes on each side, in place of cheese use shredded kraut. Prepare bread in same method as above and after putting sausage on bottom with kraut and then add caramelized onions but no pickles needed for these.
